Serves 4 as a meal, 8-10 as a side Ingredients: - Bacon, chopped, 6 oz (half of a standard bag) - Half a large onion, diced - 1 can tomato paste, 6oz - Half box of cavatappi/cellentani pasta (if not avalible, another curved pasta like fusilli or a ridged pasta like toriglioni can be substituted) - Cheddar or Colby Jack cheese, shreaded and to taste - Salt. A lot of salt. Method: - In a large pot, fry the chopped bacon until almost fully cooked - Add onion and fry together until onions are translucent - Add in tomato paste, pasta, salt, and enough water to completely cover all the ingredients - Bring to a boil - Slightly reduce heat and cover, cooking for the time given on your pasta box. - Sample the pasta. If it's still hard, add some water and continue cooking. If it's bland, add salt. - Mix in a handful of your shreaded cheese - Top with more cheese and cover, letting the pasta cool down and the cheese to finish melting - Serve hot.
